“Mini” Oatmeal Cream Pies*

These have been on my list of things to make for a while now. There’s no particular reason why. No fond memories of Little Debbie or grandma or elementary school bake sales. I just felt like making them. After a little Googling, I came across this recipe from My Baking Addiction (it was the first result—that’s some strong SEO) and gave it a try. Continue reading

Caramel Apple Pie Cookies

I had a friend encourage me to make this recipe a while back. Since we’re about to celebrate Thanksgiving and I have way too much free time, I thought I’d give ’em a shot. What I should have realized before I even bought the ingredients is how insanely wasteful these are (at least in this iteration). And messy. So messy.

Vegan Apple Cinnamon Walnut Bran Muffins

First, the good news. My official taste tester (aka “mom”) said she wouldn’t know these were vegan unless I told her. That’s a HUGE endorsement for this attempt at placating the three or four people in my life who forgo anything that comes from an animal. Now, the bad. She quickly followed up with, “Go get me one of the other ones you made. Those are better.”* Continue reading

Sun-Dried Tomato, Thyme & Asiago Scones

Not too crazy about these. However, I don’t know if I dislike them because they’re savory as opposed to sweet or they’re just not good. For what it’s worth, my mom described them as “Like pizza without the sauce.” Not exactly a thumbs down, but not exactly a ringing endorsement either (keep in mind, she prefers sweet as well). At the very least, I got to learn the difference between scones and biscuits. Turns out, biscuits tend to be lighter and don’t use any sugar. Well, that’s what the Internet has told me, anyway. Vegan Scones With Orange Zest and Dark Chocolate

After the other week’s success with vegan chocolate chip cookies, I was curious to see what else I could make taste like not shit. Seeing as how I bake an odd number of scones for a dude, I thought I’d give ’em a shot. I’ve been a fan of this scone base for years now (don’t judge me) as well as the combination of orange and chocolate, so after a little Google-fu and some tinkering, I came up with this recipe. Continue reading

Vegan Chocolate Chip Cookies That Actually Taste Good

While I may have stopped eating meat in August, I have refrained from making the leap into full-fledged vegandom because—and I’ve said this on more than one occasion—vegan baked goods are terrible. Forgoing the animal products is easy in everyday cooking, but damn near impossible when eggs and butter are called for in almost every recipe I’ve attempted. Almond milk and quinoa paste make pitiful substitutions.
